Recipe - Roasted Baby Carrots with Thyme

Serves 3 - 4


This delicious recipe keeps it simple for a short shopping list  and super quick preparation!

 
***In the Market: Try carrots from Ayala Farms and thyme from Zestful Gardens!
 
Ingredients:

12 baby carrots

1 TBS grapeseed oil

1/4 tsp salt

1/8 tsp ground black pepper

1 TBS fresh thyme

Instructions:

1) Preheat oven to 400 degrees F.

2) Wash and trim ends of 12 baby carrots

3) Pat carrots dry with paper towel and arrange in one layer in a baking sheet

4) Coat carrots with grapeseed oil

5) Season carrots with salt and pepper

6) Roast in oven until fork tender, about 25 minutes

7) Transfer carrots to a serving platter and garnish with fresh thyme

Cook time: 25 min
